The Recipe: Tart with Vesuvius Apricot Jam
Ingredients for the shortcrust pastry:
- 250 g of 00 flour
- 100 g of icing sugar
- 20 g of acacia honey
- ½ Vanilla pod
- 150 gr of butter
- 80 g of egg yolks
- ½ Lemon zest
- 1 gr of fine salt
For the filling:
- 250 g of Extra Jam 55% Vesuvius Apricots
- ½ Lemon zest
Procedure:
- Preparation of the shortcrust pastry:
- In a stand mixer, mix the soft butter with the icing sugar, vanilla seeds and lemon zest.
- Add the honey and continue mixing on low speed.
- In a separate bowl, mix the egg yolks with the salt until completely dissolved.
- Add the egg yolks to the mixture in the mixer and mix until you obtain a uniform buttery mass.
- Turn off the machine and add the flour, mixing until well incorporated.
- Transfer the pastry onto a floured surface, compact it to form a loaf, wrap it in cling film and leave it to firm up in the fridge.
- Preparation of the filling:
- Mix the lemon zest with the Vesuvius Apricot Jam in a bowl.
- Composition of the tart:
- Take the shortcrust pastry from the fridge and roll it out on a floured surface with a rolling pin.
- Line the bottom and edges of a non-stick pan with the rolled out shortcrust pastry.
- Prick the dough with the edges of a fork and pour in the prepared jam.
- Finish:
- With the remaining shortcrust pastry, create strips and place them on top of the tart to form a decorative grid.
- Bake at 180°C for approximately 40 minutes.
- Once cooked, let it cool and then serve your tart with Vesuvius Apricot Jam
